Adrian honed his cooking skills at a young age, growing up in Mexico. After moving to Texas, he would soon start his cooking career in De Leon, Texas, in 1996. He later ventured into Abilene, where he worked for several local restaurants before fate brought him to Oscar’s Mexican Restaurant, and met with the restaurant owner Oscar Abila. Oscar saw the potential in the young hard working chef, and quickly hired him. His encounter with Oscar began a culinary partnership that spanned, a little over 17 years now.

Oscar Abila opened the first Oscars Mexican Restaurant, which is located on 1665 State Highway 351 in Abilene. He opened the 2nd location a few years before he passed in 2021. Oscar became a friend and mentor to Adrian, teaching him the ins and outs of the restaurant business. Oscar once told Adrian he picked him to run Oscar’s Mexican Restaurant #2 because of his work ethic and he knew he could trust him to get the job done.

When asked about his favorite dish on the menu, Adrian confidently recommends the #34 Shrimp Quesadilla. This delightful creation features two flat tortillas piled high with grilled shrimp, vegetables, and melted cheese. Adrian describes them as “delicious, very crispy, you feel the crunch!” Served with pico de gallo, sour cream, and guacamole, it’s a treat that keeps patrons coming back for more

Adrian also suggests trying the #36 Steak Encebollado, a succulent grilled steak topped with grilled onions, served alongside rice, beans, and tortillas.
